I know it's a little late to throw my hat in the ring, but I've been thinking . . .
I'd love to hear The Tea Party do I Wish It Would Rain Down. That would make the ladies (and P-Dave) weep.
Also, I wouldn't mind hearing Joe Bonamassa take control of Something Happened on the Way to Heaven.
Last but not least, I propose that we get Brian Krumm of The Great Crusades to do a rockin' version of Easy Lover.
